Red Pepper and Anchovy Sauce

While filming the television series that accompanies this book, we visited the church of San Lorenzo in Sogliano Cavour. Lorenzo died a martyr on the grill. His saint’s day is still celebrated and, as part of the festivities, I cooked fresh sausages for ten local people called Lorenzo. After all, what could be more appropriate than a grilled dish f I felt the sausages needed an accompaniment so I devised this sauce. It is delicious with all sorts of grille
