To do justice to the exceptionally good orange blossom honey from Pietro Pizzimenti in Calabria I borrowed a recipe from Sardinia because I thought the two would combine to produce perfection. The Sardinian raviolo called sabadas, or sebadas, is usually flavoured with local honey but I find the Calabrese honey quite irresistible.
