There’s a little work to do if you want to eat one of the best Southern specialities. Every bar or pasticceria in the South makes these pastries, which were originally the symbol of Sicily. They are eaten at any time as a pleasant little calorie shot to regenerate the powers!

To shape the cannoli you will need some pieces of bamboo cane or metal tube, about 15 cm (6 in) long and 2 cm (¾ in) thick.
