Method

Put the sugar, ricotta, cinnamon and hard-boiled egg yolks in a bowl and mix together well, then pass through a sieve. (Alternatively you can whizz everything together in a food processor.) Chill for 2 hours, until firm.

Cut the peaches in half, then twist and remove the stone carefully with a sharp knife. Take a small scoop and remove a little of the flesh from the cen
