This recipe is my invention, using Southen ingredients in a Northern way. The result is delicious.
Put the sugar, ricotta, cinnamon and hard-boiled egg yolks in a bowl and mix together well, then pass through a sieve. (Alternatively you can whizz everything together in a food processor.) Chill for 2 hours, until firm.
