Anyone brought up in the South of Italy will remember Vino cotto - a dense, treacly liquid made by boiling down red grape must. In summer it is diluted with water to make a refreshing drink, while in winter it can be poured on to a snowball, which is then sucked as a sort of primitive sorbet. It is also often used in biscuits and cakes or to flavour all sorts of desserts and fruit salads.
As red grape must is not easy to obtain, I have simply boiled red wine in this recipe, r
