We use harissa to give this popular vegan breakfast an awesome spicy twist. When it’s crumbled, tofu has an uncanny resemblance to scrambled egg and it’s even high in protein. We’ll always have these ingredients stocked up in our kitchen, so this tofu scramble has become one of our favourite ways to treat friends who pop over for brunch.
