These mushrooms are a total treat. We’ll happily gobble these up as they are or serve them as a brunch with our Harissa Tofu Scramble.

Ingredients

  • 60 g raw cashews
  • 4 garlic cloves
  • 2 tsp brown rice mis

Method

Preheat the oven to 210°C/190°C fan/gas mark 6.

Transfer the cashews to a small bowl and cover them with hot water from the kettle. Set the bowl to one side and leave to soak until the cashews become soft, about 10 minutes.
