This vibrant salad is bursting with colour. It’s fresh, full of flavour and it’s now our go-to recipe when we have friends visiting and we want to prepare a healthy and nutritious meal. Usually we’ll cook the beetroot in advance and simply prepare the salad when it’s needed. Easy.


  • 3 medium raw beetroots
  • 1 garlic clove
  • 2 Granny Smith apples
  • 7


Preheat the oven to 220°C/200°C fan/gas mark 7.

Wrap the beetroots in a piece of foil and cook them in the oven for 45 minutes – 1 hour
