This is a wonderfully warm and colourful summer meal. Giant couscous is a joy to cook with; it’s filling and slightly chewy, and here it teams up superbly with the comforting classic flavours of the Mediterranean.

Ingredients

  • 300 g ripe cherry tomatoes
  • 120 g giant couscous
  • 50 g

Method

Preheat the oven to 200°C/180°C fan/gas mark 6.
