We always have a supply of cashews ready to use for a creamy sauce. Here we blend them with nutritional yeast aka ‘nooch’ to replace the heavy cream used in traditional Alfredos.


  • 70 g raw cashews
  • 150 g tagliatelle
  • 200 g


Transfer the cashews to a small bowl and soak them in hot water from the kettle for 10 minutes.

Add a pinch of salt to a pan of boiling water set over a high heat and cook the tagliatelle as per the packet instructions.
