Cauliflower is one of those veggies that will happily take centre stage at any dinner table. The korma paste and coconut is a match made in heaven; it’s creamy, sweet and has all the wonderful aromas you’d expect from a curry. We’ll usually serve this alongside rice and a bowl of wilted spinach.

Ingredients

  • 400 ml tin full-fat coconut milk
  • 2 tbsp korma paste
  • 1 large

Method

Open the tin of coconut milk to check if the cream has set. If not, place the tin in the fridge until the cream has set to the top, then preheat the oven to 220°C/200°C fan/gas mark 7.
