This has everything you’d want from a big bowl of noodles. It’s spicy, salty and healthy, so there’s a lot going on to keep your taste buds happy. We love to use courgette instead of regular noodles for some added nutrition and colour.

Ingredients

  • 250 g extra-firm tofu
  • 60 g dry roasted peanuts, plus extra to garnish

Method

Press the tofu to remove any excess water, then slice it into 3cm pieces. Add a little olive oil to a frying pan over a medium heat. Once hot, add the tofu and fry for 15–20 minutes, turning every 5 minutes, so that both sides get crispy.
