This is something we’ll often turn to when we’re both too busy to spend hours in the kitchen. We leave the sweet spuds to bake in the oven, then simply throw everything together in the last few minutes. If you have the time, have a go at creating our Lemon & Coriander Hummus.

Ingredients

  • 2 medium sweet potatoes
  • 400 g tin chickpeas
  • 2 tsp gro

Method

Preheat the oven to 220°C/200°C fan/gas mark 7.

Rinse and pat dry the sweet potatoes, then pierce them a few times with a fork. Place them on a baking tray and bake in the oven
