Roxy grew up surrounded by the sweet smell of freshly made banana bread in the house and it didn’t take her long to master a vegan version of this classic recipe. We wanted to make something extra special for this cookbook, so we turned to coconut for a tasty twist.

Ingredients

  • 400 g peeled ripe bananas, plus 1 extra ripe banana
  • 4 tbsp coc

Method

Preheat the oven to 200°C/180°C fan/gas mark 6 and line a 450 g (approx. 20 x 10cm) loaf tin with coconut oil, then line the loaf tin with baking paper.
