We’ll rarely let rice simmer away on its own. We’re always attempting to turn it into something special by throwing in a host of ingredients pulled out of our kitchen cupboards. This tomato rice is one of our best; it’s outrageously moreish and the chipotle delivers a reassuringly spicy kick.

Ingredients

  • 1 onion
  • 4 garlic cloves
  • 200 g brown rice

Method

Peel and finely chop the onion and garlic. Add a little olive oil to a saucepan over a medium heat. Once the oil is hot, add the onion and fry for 10 minutes, stirring occasionally. Add the garlic and fry for a further 2 minutes.
