There’s a special shop in Finsbury Park, North London, that sells the most amazing naan and flatbreads, which is where we first discovered za’atar. We were like kids tasting ice cream for the first time, and ever since then we’ve been hooked on this magical spice. Here we combine it with tahini, garlic and lime to flavour these Middle Eastern-inspired crispy wedges.
