Vegan cheese recipes can often be very fiddly and time-consuming, but not this one. We use cashews for their creamy texture and we’ve made it as easy as possible for you to make at home. Great on crackers and toast, or do what we do and add it as another tasty layer to a sandwich.

Ingredients

  • 250 g raw cashews
  • 2 garlic cloves
  • 1 tbsp lemon juice

Method

Transfer the cashews to a small bowl and cover with hot water from the kettle. Leave to soak for 20 minutes. Drain the cashews and add them to a food processor.
