In Castile, hogaza is a round bread with a hard crust and a spongy texture, and a pincho is a piece of bread with something on top. At the counter of the bar ‘L’Herranz’ on Calle Echegarai in Madrid, you can sample a number of variations inspired by the delicious, famous Catalan pincho, pan amb tomaquet or bread and tomato.
