It will not be easy, outside Spain, to find the rice and onion black puddings that are made in the area around Burgos, but if you are travelling in Spain I suggest you try them so that you understand my insistence on using them. However, this recipe can be made with black pudding from anywhere and still tastes wonderful. The very thin spicy chistorra sausages from Navarra are ideal for chorizo pinchos, but any of the many other kinds of this spicy sausage taste good prepared i
