This is another recipe from Madrid that is served in the earthenware casserole in which it is cooked. The quail is the smallest of the hen family. It is more delicate than partridge, especially in the autumn before the migration season begins. They are mostly battery-bred now and can easily be bought in packs from the supermarket. They are not as tasty as they used to be but are still very appetising if cooked well. Apart from the following recipe, they are often cooked with rice, simply ro
