Mussel Soup

I can still recall a wonderful boat trip to the rafts in the Ría of Villagarcia de Arosa in Pontevedra, where mussels, oysters and scallops grow in abundance. The mussels we used to make this soup were small but deliciously full of flavour. Although the dash of eau-de-vie that is made in Galicia removes the soup from its original fishing village origins, it does give a wonderful touch of sophistication.
