Fish Soup

This is a substantial, wonderfully strongly flavoured soup which I would recommend for lunchtime. It shows off to ‘perfection the traditional Spanish method of thickening soup with pieces of bread. At the ‘Casa del Pescador’ in Fuenterrabia it is so popular that it is made at least once a week. This is one of those dishes that is much better made the day before it is needed then re-heated gently.
