The cold garlic and almond soups which are so well made in Málaga and Córdoba have come down to us from the Middle Ages, when the Moors were busy enriching Al-Andalus. This recipe is one that José Antonio Valdespino makes in his restaurant, ‘La Mesa Redonda’, in Jerez and in my view it is masterly.
