The principality of Asturias, in the north of Spain, is bathed by the Cantabrian sea. It has given Spanish cookery a dish of which we all feel rather proud: this lovely substantial stew richly flavoured with spicy sausages. I would pay handsomely for it if I could find it in one of my local restaurants near Baker Street, although I confess it was not always such a favourite: as a child I can remember crying bitter tears on Tuesdays which were fabada days at school!
