Caldo, Galician broth, is a dish that is served in all Galician restaurants and is cooked on a daily basis. One day in autumn whilst shopping in Santiago market I asked one of the owners of a bean and chick pea stall if she knew of a recipe for Galician broth. After exchanging various ideas with the nearby stall owners she gave me the following recipe.
