This is another of the great recipes of Catalonia and one of Spain’s finest. They make it excellently at the ‘Hostal de la Gran Nota’ in the little town of Sils in Gerona. In the version I ate recently there were medium-sized artichokes, too. This recipe calls for baking in the oven, but if you can make escalivada griddled over charcoal, so much the better. In its purist form escalivada consists only of aubergines, peppers and onions.
