Almanzora Potatoes

The cooking of the Almanzora river valley, between the provinces of Murcia and Almería, makes masterly use of the ingredients that were brought back from the New World by the conquistadores — the potato and the pepper — yet at the same time follows the Moorish culinary tradition. Just a little of the pepper flesh gives a wonderful flavour to the smooth potatoes, and imparts a richness of colour too. These potatoes are usually served with little fried balls of corn.
