Together with the cocido, this omelette made of potato, egg and onion nothing else — is one of those dishes that crosses all the regional boundaries of Spanish cooking. There are other excellent omelettes, such as the one my beloved Luis de Soto used to make in Seville with green pepper and chorizo from the Aracena mountains. You can try this traditional version, then experiment with your own favourite taste combinations.
