Spanish cooks always have fresh tomato sauce to use in their cooking and this is a traditional Basque way of preparing a sauce.
Place the oil in a frying pan and add the onion, garlic and tomatoes to the cold oil. Place over a low heat, cover and cook for 30 minutes until the oil rises to the surface. Leave to cool. Purée the sauce if you want it to be very fine.
