We Spaniards like beer, and I love a caña, a glass of draught beer, in the middle of a hot summer’s day. I do like to use beer as an ingredient, too. In this recipe, it marries perfectly with the sweet and sour flavour of the brown sugar, vinegar and the trilogy of herbs that I use most in my own cooking: thyme, rosemary and a bay leaf.
