Old Andalusian Christmas Turkey

I remember that the first time I spent Christmas with my husband’s family on the Isle of Wight, Charles, my father-in-law, asked me if we had turkey for Christmas in Spain. In fact, this bird reached the rest of Europe via the conquistadores who brought it back from the Americas to Spain, replacing pigeon which had been the Moslems’ and Jews’ festive dish.
