Partridges with Chocolate Sauce

Some recipes from Navarra and Catalonia use chocolate as a special ingredient in their sauces. One classic example is the Costa Brava dish known as mar y montaña, or sea and mountain, which contains lobster and chicken. Another is this recipe from my grandmother’s notes. Though the combination of chocolate and savoury foods sounds risky, the results are surprisingly delicious — believe me!
