I can still remember helping my grandmother to pluck the feathers from these fowl. She would singe the quail on a lively flame, and let me pluck out the little feathers that had been left behind by this ostentatious operation. Today, small quail can be bought ready plucked so her recipes are easier to make, but because these are farm birds they do not have quite the delicious flavour of the birds that are free to flutter about the countryside.
