I enjoy the more complicated dishes of Galician cooking most during the winter, and none more so than this one which includes a delicious vegetable with a strong character of its own that is all too often overcooked: the grelo or turnip top. This is a dish made during carnival, and its star is the foreleg of the pig. It is served with a red Ribeiro wine drunk from little white porcelain cups that contrast with the almost purple colour of the young local wine.
