This is one of the dishes I call ‘school food’, although it is one I always liked. When we make meatballs at home we simply add some bread that has been soaked in water and drained, a whole egg, parsley and chopped garlic to make the meat, which should be very lean, succulent and tasty. Every household has its own formula: although the results may be similar, the cook always imparts his or her own personality.
