The word filloa comes from the Latin folio, meaning leaf. The term is ideal, because the secret is to make the pancakes so thin that you can almost see through them, like a leaf in the sun. They are quite unlike other delicious versions, such as the French crêpe, although, in the same way as these, you can serve both sweet ones for dessert and savoury ones as a first course.
