Mamía and Apple Pastries

This is a deliciously light puff pastry slice filled with apples lightly flavoured with lemon and apple liqueur. Instead of a cream filling, we use this natural junket or mamía, which in Spain is made with ewes’ milk. If you like making puff pastry you can, of course, use your own recipe, but frozen pastry gives excellent results in much less time.
