I used to dread Holy Week as a child, because I was made to stay silent for hours on end every day, but I was always cheered up by the torrijas that were made for dessert or tea. They can sometimes be found at other times of the year in a few of Madrid’s cafés where they are always delicious. If I am there, I love to indulge in one or two. People still make them at home, using all kinds of bread, even the sweet Swiss bread, but the best are made from the long French-style loaves cut
