Royal Icing

Royal icing is traditional and is staging a comeback! Made from fresh egg white and icing sugar, royal icing is a sweet paste that is lathered onto the cake and allowed to set. Once made, royal icing will keep fresh in an airtight container for up to 7 days. It will separate if left for longer than 24 hours and should be rewhisked before using.
