Blocking a cake with fresh flowers or fruit is a stunning way to present it and creates an illusion that each tier is suspended on a bed of fruit or flowers. Blocking is also one of the most stable methods of stacking tiers. The polystyrene blocks provide surface-area stability for the tier above and also a base for wired flowers.

Method

  1. Place the polystyrene blocks in the centre of the 2 largest tiers. Insert a dowel at the centre point of each side of the block, making sure they are straight and pushed down to the boards. Mark each dowel where it meets the top of the block.
