How you cover a cake with marzipan depends on whether you are going to be using sugar paste or royal icing. For sugar paste, the marzipan is rolled out and smoothed over the cake in one piece to create softly rounded edges.

Ingredients

You Will Need

  • cake
  • thin board the same size as the cake
  • pastry brush
  • boiled, sieved apricot jam
  • marzipan
  • icing sugar

Method

  1. Place the cooled baked cake upside down on a thin cake board the same size as the cake and brush liberally with boiled, sieved apricot jam. Knead the marzipan until smooth and pliable. Dust the work surface lightly with icing sugar and roll the marzipan evenly into a size large enough to cover the top and sides of the cake, allowing for surplus (use string to measure). T
