Cascading Pearls

This design is very simple for the novice cake decorator as there is no pre-marking or structure to follow. Each of the tiers is placed on a board the same size as the cake it supports, so handle the tiers with care, holding them from underneath. I find this cake works particularly well if partnered with strong solid flowers; here I have blocked the cake with a mixture of ‘Ecstasy’ and ‘Aqua’ roses, burgundy ranunculus and gloriosa lilies.
