Chocolate Roses

Individual chocolate-covered cakes look stunning dressed with these hand-moulded chocolate roses. They are perfect for an elegant wedding, served for pudding dressed on a plate with a little raspberry coulis or coconut ice cream. The quantity of chocolate plastique given here will make approximately 8–10 roses of 5cm (2in) diameter or cover three mini cakes and make a rose for the top of each as shown opposite. The roses will store well for up to six months in a cool, dry container.
