Individual Ganache Bites

These individual bite-size cakes are covered with an initial coat of white chocolate plastique then enrobed with tempered chocolate. Each is topped with a chocolate-dipped strawberry and displayed on a white chocolate stand. This cake is very popular for cocktail parties, for which the little cakes are an ideal size. Be sure to make enough! I use a half-depth cake to make these bites. This keeps the height down so they are easier to eat with your fingers.
