This cake has been made to look like a tantalizing Christmas present box. It is a versatile design that can be adapted for many occasions by changing the colours and ribbon. The cake is very deep, made up of two 6in square cakes to form a cube.

Method

Brush the cake with boiled apricot jam and cover with marzipan in panels as though it were to be covered with royal icing. (This will give the box squarer edges.) Brush the top and sides of the cake with brandy. Knead the red sugar paste until smooth and pliable and divide into 3 equal portions.
