This is an adaptation of the contemporary romantic wedding cake shown opposite. I have added a wide ribbon around the base of a two-tier hexagonal cake, which can mask an unsightly edge, and have finished the cake by randomly hand piping tiny pearls on each tier. The cake has been blocked with fresh aromatic roses.
Carefully set the tiers down onto plain boards 3in larger to dry and allow for transportation. Fix lengths of ribbon around the base of each tier and fix in position with royal icing. Pipe random pearls on each tier using a no. 1.5 nozzle.
