Ras el hanout, a complex and distinctive mix of spices and herbs originating in the Meghribi villages of North Africa, translates literally as ‘head of the shop’ spice and varies according to who makes it. Most versions list 20 or so spices but specific quantities are a much-guarded secret from one spice shop to the next, where blending is considered a special art.
