Goma shio is one of the few spice flavourings used in the cooking of Japan, which tends to rely on the unadulterated flavour of the protein or vegetable being used. It is a simple seasoning, and the sesame seeds give an added crunch and nutty flavour. Often sold already prepared in Japanese food stores, goma shio is used to flavour vegetables and rice and is taken to the table as a condiment.
