The tiny territory of Goa is situated on the central western coast of India, south of Bombay, and has a history of French and Portuguese colonisation. Vindaloo curries, traditionally made with pork although now made with a wide variety of meat and fish, are considered the hottest in India and have a characteristic sourness provided by vinegar.
